Taiwanese Beef Noodle Soup
 
Ingredients (4-6 servings)
2 lbs beef shank
1 medium onion (halved, sliced)
1-2 heads garlic (to taste, peeled)
1 knob of ginger (sliced)
¾ cup soy sauce
½ cup black bean sauce
½ cup tomato paste
3 cups chicken stock
3 Tbsp five-spice powder
1 pkg (16 oz) thin white noodle
Chili garlic sauce (optional to taste)
 
Directions
Blanch the beef
1. Prepare a large pot of boiling water (enough to cover the beef).
2. Cut beef in 1.5 inch pieces against the grain and add to the pot. Boil covered for 5-10 minutes.
3. Remove the beef and set aside. Discard the pot of water to remove the froth. Wash the beef under water and return to the empty pot.
 
Prepare the vegetables
4. Halve and slice onion.
5. Smash and peel garlic cloves.
6. Slice ginger.
 
Brown the beef
7. Return the beef to medium heat pot to brown with soy sauce, tomato paste, and black bean sauce.
8. Once beef pieces are coated, sauté with onion, garlic, ginger, and five-spice.
 
Braise the beef
9. Add chicken stock and simmer for 2 hours (until tender).
 
Prepare the noodles
10. Prepare noodles in boiling water per package instruction. Drain and place in a bowl.
 
Eat!
Spoon the beef stock with beef and vegetables over the noodles (optionally add chili garlic sauce to taste) and taste the love.
